Fudgy Sweet Potato Brownies

Potato potahto ... I say brownie

This is my first time ever making brownies with sweet potatoes... and to quote Bazzi “at first, I was hesitant.” but, I’ll be damned they actually slap 👀 these are now my go-to brownies!

FUDGY SWEET POTATO BROWNIES

+ microwave a sweet potato for 5 mins (flip halfway and don’t forget to pierce with a fork multiple times before microwaving it.

+ after, peel the potato and mash with a fork in a bowl
+ add 2/3 cup of maple syrup
+ 1/2 cup of PB @picspeanutbutter
+ 1 tsp vanilla
+ 1 1/2 tbsp of avocado oil
+ 1/2 cup of cacao powder
+ pinch of salt
+ 2/3 cup of GF oat flour

bake in a coconut oil sprayed baking tin (8x8) and bake at 350°F for 28 mins

+ Topped with Salted Coconut Caramel Sauce ( @earthyandy )
