Chocolate Drizzled Coconut Macaroons
The other day I was watching Great British Baking Show with my family and was inspired by Prue’s Coconut Macaroon Stuffed with Mango. Now, I didn’t have any mango to stuff in mine and so I adapted the recipe to fit my diet / the items in my kitchen! So, these are chocolate drizzled coconut macaroons!
{HOW TO}
Chocolate Drizzled Coconut Macaroons
+ 5 cups of shredded unsweetened coconut flakes
+ 1.5 cups of sugar
+ pinch of salt
+ 1 tsp vanilla extract
+ .5 tsp almond extract
+ 4 egg whites beaten in a high speed mixer
(fold in the egg whites)
+ scoop using cookie dough scooper onto a lined baking sheet
+ bake at 350° F for 12-15 mins (until golden brown on top)
+ drizzle with melted chocolate
