Apple Cake
Cake Instructions:
1 cup unsweetened almond milk
1/2 cup melted coconut oil
1/2 cup unsweetened applesauce
4 eggs
1 tsp vanilla extract
1 cup packed dark brown sugar
2 tsps cinnamon
1/2 tsp allspice
1 1/2 tsp baking soda
1 tsp baking powder
3 cups GF oats
1 1/4 tsp kosher salt
3 Granny Smith apples cored and diced with skin on
2 Granny Smith apples peeled and diced
1 cup GF oats
Topping
1/2 cup GF oats
1/2 cup packed dark brown sugar
1 1/2 tbsp GF flour
3 tbsp melted coconut oil
1/4 tsp kosher salt
1 tsp cinnamon
1/2 tsp allspice
Preheat oven to 350 degrees
Grease with coconut oil a 9x13 pan
In a blender add in order all the cake ingredients up to and including the 3 Fuji apples
Blend until completely mixed
Pour into a bowl and add the remaining oats and apples and mix together
Pour into the prepared pan
Mix the topping until blended using a fork or your hands
Sprinkle on top of the cake mixture
Bake for approximately 45 minutes until the toothpick comes out clean
Serve warm with ice cream or whipped cream.
