Gluten Free & Dairy Free Carrot Cake
Gluten-free & dairy-free carrot cake that I made with my mom for her birthday!! This recipe is absolutely delicious & everyone should try it!
In a kitchen aid mixer beat on high until light and airy looking
3 eggs
1 cup of raw turbinado sugar
1 cup of coconut sugar
1 1/3 cup to melted coconut oil
1 tsp vanilla
then add:
1 1/2 cup of Paleo Flour (I used King Arthur)
1/2 cup of gluten-free oat flour
2 tsp cinnamon
1/2 tsp allspice
1 1/2 tsp salt
2 tsp baking soda
1 cup of chopped dates
1 pound of grated carrots
Put in a sprayed 9x12 pan and bake at 400°F for 10 minutes and then lower to 350°F and bake for 25 minutes (and check) - I topped mine with the coco whip from TJ’s, enjoy!
