Gluten Free & Dairy Free Carrot Cake

Gluten-free & dairy-free carrot cake that I made with my mom for her birthday!! This recipe is absolutely delicious & everyone should try it!

  • In a kitchen aid mixer beat on high until light and airy looking

  • 3 eggs

  • 1 cup of raw turbinado sugar

  • 1 cup of coconut sugar

  • 1 1/3 cup to melted coconut oil

  • 1 tsp vanilla

  • then add:

  • 1 1/2 cup of Paleo Flour (I used King Arthur)

  • 1/2 cup of gluten-free oat flour

  • 2 tsp cinnamon

  • 1/2 tsp allspice

  • 1 1/2 tsp salt

  • 2 tsp baking soda

  • 1 cup of chopped dates

  • 1 pound of grated carrots

Put in a sprayed 9x12 pan and bake at 400°F for 10 minutes and then lower to 350°F and bake for 25 minutes (and check) - I topped mine with the coco whip from TJ’s, enjoy!
