Handsome & Healthy Gingerbread Men
3 cups of gluten free flour
2 tsp ground ginger
3/4 tsp salt
1/2 tsp allspice
1/2 tsp pepper
1/2 tsp baking soda
1/4 tsp baking powder
1/2 cup coconut oil melted
1/2 cup molasses
1/2 cup coconut sugar
1 egg
In a bowl, combine flour, ginger, salt, allspice, pepper, baking soda and baking powder. In a separate bowl combine coconut oil, molasses, coconut sugar and the egg. Pour the wet into the dry and stir. Take the dough and cut it in half and roll into a flat circle shape and refrigerator it for about an hour. Once done, take out the dough and roll it out (1/4 inch thick) onto a floured surface. cut into the shapes you desire and place on parchment paper (on the cookie sheet) and cook in the oven at 350 for about 8-10 mins.
