Gingerbread Men - Gluten Free & Vegan

Dough Ingredients

  • 1/2 cup of vegan butter (I used country crock plant based)

  • 1/2 cup of coconut sugar

  • 5 tbsp of molasses

  • 3 tbsp unsweetened apple sauce

  • 2 1/4 cup of gluten free flour (Bobs Red Mill)

  • 1 tsp baking soda

  • 1/8 tsp salt

  • 1 tbsp cinnamon

  • 2 tsp of ground ginger

  • 1 tsp cloves

  • 1/2 tsp all spice

Icing 

  • 2 cups powdered sugar

  • 3 tbsp lemon juice

How to:

  • Mix vegan butter and coconut sugar in a mixer.  

  • Add the molasses, apple sauce, and mix on low speed. Then add half of the GF flour and mix until combined

  • Now add the other half of the GF flour and the salt and spices. Mix until combined.

  • Divide the dough into two portions, form flat discs and then wrap in plastic wrap. Place in the fridge for at least 2 hours.

  • After, preheat the oven to 350 F and line a baking sheet with parchment paper. 

  • Lightly flour your countertop with GF flour and roll out the chilled dough until it is about 1/4” thick. 

  • Cut the cookies out and place onto the baking sheet and bake at 350f for 11 minutes.
