Gingerbread Men - Gluten Free & Vegan
Dough Ingredients
1/2 cup of vegan butter (I used country crock plant based)
1/2 cup of coconut sugar
5 tbsp of molasses
3 tbsp unsweetened apple sauce
2 1/4 cup of gluten free flour (Bobs Red Mill)
1 tsp baking soda
1/8 tsp salt
1 tbsp cinnamon
2 tsp of ground ginger
1 tsp cloves
1/2 tsp all spice
Icing
2 cups powdered sugar
3 tbsp lemon juice
How to:
Mix vegan butter and coconut sugar in a mixer.
Add the molasses, apple sauce, and mix on low speed. Then add half of the GF flour and mix until combined
Now add the other half of the GF flour and the salt and spices. Mix until combined.
Divide the dough into two portions, form flat discs and then wrap in plastic wrap. Place in the fridge for at least 2 hours.
After, preheat the oven to 350 F and line a baking sheet with parchment paper.
Lightly flour your countertop with GF flour and roll out the chilled dough until it is about 1/4” thick.
Cut the cookies out and place onto the baking sheet and bake at 350f for 11 minutes.
