Gluten-Free Banana Pancakes w/ Peanut Butter

These pancakes are super easy to make and so incredibly delicious! I find it easier to mix the batter in a blender, it gives it a smoother consistency & really helps blend up the bananas well :)

In a blender combine

  • 2 bananas

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • pinch of salt

In a bowl add

  • 1/2 cup of gluten free flour

  • 1/2 tsp baking powder

Combine the wet into the dry ingredients and mix.

You can add chocolate chips, blueberries, coconut flakes or really anything you desire!

Now all you have to do is cook them on a pancake pan on the stove & I love to top them with peanut butter (Pic’s Peanut Butter) or almond butter (99th Monkey).
