Smashed Potato with Pesto Sauce
Take red potatoes and boil them for 20 mins or until soft enough to smash.
Then place on oiled pan and smash, then put the pan in the oven at 450 and bake for 20 minutes.
Pesto Sauce (make in a blender)
- 1/4 a cup of olive oil
- about 1 cup of basil
- 1/2 cup of spinach
- a splash of lemon juice
- salt and pepper to taste
To plate:
Put pesto on top of potato & drizzle with olive oil (you can also add red pepper flakes)
