Shrimp Stir-Fry
Ingredients
• red onion (one small) chopped into thin strips
• one zucchini, shredded (using carrot peeler)
• shredded carrots
• bamboo shoots (canned) drained
• 2 cloves of garlic minced
• 1 red chili pepper minced
• fresh shrimps (peeled & deveined)
• rice noodles
• gluten-free soy sauce
• sweet chili sauce
How to make:
• Sauté the onion and garlic in a pan with olive oil. Once slightly cooked, add as much Zucchini and Carrot as you like. Also add the minced chili pepper
• Once sautéed, add the shrimps and cook them. Toss in the bamboo shoots as well.
• Toss in soy sauce and some sweet chili sauce. Season with pepper.
• Add all the veggies and shrimps onto the cooked rice noodles.
Serve and top with more sweet chili sauce as needed.
