Spooky Season Sugar Cookies
HOW TO MAKE: (GF & DF)
In a high-speed mixer add
• 1 cup of vegan butter (I did 1/2 a cup of Crisco & 1/2 cup of country crock avocado butter)
• 1/4 cup of brown sugar
• 3/4 cup of sugar in the raw
(mix until creamy)
Next Add:
• 1 tsp vanilla extract
• 1/2 tsp almond extract
• 1 egg
(mix)
Now add:
• 2 1/2 cups of GF all-purpose flour (make sure yours has xanthan gum)
• 1 1/2 tsp of baking powder
(mix and then refrigerate for 30 mins)
After (optional) split the dough into 3 equal portions and color each with desired food coloring or just use dough in its normal color. Roll out to 1/4 inch thickness and cut using Halloween cookie cutters.
Bake at 375°F for 9-11 minutes (check at 9)
ICING RECIPE
2 cups of powdered sugar
2-3 tbsps of almond milk
