Soft Ginger Cookies

Ingredients

2 eggs
1/2 cup of almond butter
1/4 cup of molasses
1 tsp vanilla
1/4 cup of sugar (coconut or regular)
1/2 cup of coconut flour
1 tsp baking soda
1.5 tsp of cinnamon
1 tsp ginger
1/2 tsp all spice
1/2 tsp pumpkin pie spice (from TJ’s)

How To:
Mix the wet ingredients and then add in the dry. Place the dough in the freezer for 20 mins. Roll into balls and roll in sugar. Press the dough balls flat onto a baking sheet with parchment paper.

Bake at 350° F for 9-10 mins.
