Oat flour date bars
For the Oat Layer
* 2 cups of oat flour
* 1 1/2 tsp cinnamon
* 1 tsp baking powder
* 2 tbsp date syrup
* 1 cup of mashed bananas * 1/2 tsp baking soda * pinch of salt
* dash of vanilla
For the middle date layer
* about 1 to 1 1/2 cup of fresh dates * a few squeezes of fresh lemon juice * 1/4 cup of water * 1/2 tsp cinnamon
In a baking tin, place parchment paper and then add half of the oat mixture into the tin, then add the date mixture and then top with the rest of the oat mixture //
Optional toppings are: chocolate chips, coconut flakes, more dates etc)
bake at 170 C for 25 mins
