GF/DF Cinnamon Roll Loaf
In a blender combine
2 - 3 bananas ( 1 cup)
2 eggs
1/3 cup coconut oil melted
1/3 cup maple syrup or syrup
1/4 cup of almond or coconut milk
dash of vanilla extract
In a bowl combine
2 cups of gluten free flour
2 tsp baking powder
1 tsp cinnamon
Combine the dry ingredients with the wet, mix and then pour into a coconut oil greased loaf pan.
Next make the cinnamon crust
combine coconut sugar, maple syrup and cinnamon into a bowl ( i did not measure)
Pour the cinnamon mixture on top of the banana bread and swirl around with a toothpick
Bake in the oven 200 degrees C for about 40 mins
