GF/DF Cinnamon Roll Loaf

In a blender combine

  • 2 - 3 bananas ( 1 cup)

  • 2 eggs

  • 1/3 cup coconut oil melted

  • 1/3 cup maple syrup or syrup

  • 1/4 cup of almond or coconut milk

  • dash of vanilla extract

In a bowl combine

  • 2 cups of gluten free flour

  • 2 tsp baking powder

  • 1 tsp cinnamon

Combine the dry ingredients with the wet, mix and then pour into a coconut oil greased loaf pan.

Next make the cinnamon crust

  • combine coconut sugar, maple syrup and cinnamon into a bowl ( i did not measure)

Pour the cinnamon mixture on top of the banana bread and swirl around with a toothpick

Bake in the oven 200 degrees C for about 40 mins
