Dairy Free & Soy Free King Cake

Going to school in Louisiana has made Mardi Gras a big deal to me, and I gotta be able to celebrate and eat cake. So, my mom and I made this dairy free (so I can eat it) and soy free King Cake.

Recipe:

CAKE:

1 pkg dry active yeast

2 tbsp warm water

1 tsp salt

3 tbsp sugar

1/4 c coconut milk

2 tsp lemon zest

1/4 tsp allspice

2 1/2 c flour

2 eggs ( or egg replacer to be vegan)

8 tbsp cold vegan butter cut into pieces

FILLING:

1/2 c sugar

1 1/2 tsp cinnamon

1/3 c vegan butter softened

ICING:

1 1/2 tbsp vegan butter

1 1/2 cup powdered sugar

1/4 tsp vanilla

2 tbsp coconut milk

BAKE for 350 at 25 mins & then frost once cooled

Directions:

- in a mixer bowl place the yeast and warm water - let stand until foamy

- in a different small bowl add salt, coconut milk, sugar and lemon zest - stir and then add to yeast mixture

- in a different bowl mix the allspice into the flour 

- with the mixer on a low speed, add the eggs & then add the flour/allspice slowly

- mix on a low speed for about 10 minutes

- once it has been mixed, place the dough in a lightly oiled bowl (coconut oil) and let it rise for about an hour

- then bake, decorate and enjoy :)
